In the Times Union’s farmers market Q&A series, Jennifer Rittner-Paniccia described starting 3 Chicks and a P with her husband, Matt Paniccia, in 2011 after he lost his job, making tahini-free hummus, vegan pestos and dips in small batches. They sell weekly at TWFM, the Schenectady Greenmarket and the Delmar Farmers Market.

“When Matt lost his job, we decided to lean into my cooking skills as a way to bring in money, and it took off from there.”
