Lauren Hittinger profiled Collar City Hard Pressed, the cold-pressed juice stand that owner Jessica Garrity opened at the Troy Waterfront Farmers Market’s indoor season in November 2013. Hittinger described watching juice made to order at the stand and sampling “Go for the Green” and “We Got the Beet.” In a Q&A, Garrity explained why she started the business, said all of the pulp goes to fellow market vendor Mariaville Farms of Delanson to feed animals, and said she was planning mainly for the summer market, with bigger to-go containers and possibly a retail location to come.

“I kind of hate leaving my neighborhood on the weekend so just thought it was only fair that we had a juice place here downtown.”
